I THINK I SCREWED UP MY METABOLISM

OK, so after skimming the eatfatlosefat blog a bit I had an epifiny (?).

I was talking to a friend the other day about the fact that some of the people we work with are so skinny and seem to eat enormous amounts and the other VERY LARGE people are the ones we always see with salads, slimfast, Lean Cuisines etc.

I am seeing the light! It is still a little dim (sort of like me, huh? :gig)

Wrong foods! High carbs, soy products, veggie oils, etc. Maybe we're not really fat as much as just swollen! :ya

RIGHT!! I was pissed too when I realized I had been lied to. We used to get fresh milk back in small town TX--delivered too. (Old fashioned town.) Then non-fat powdered milk was all that my mother served b/c she thought fat was bad for you. Back then the only way you could get non fat milk was in powdered form. :sick My parents were vegetarians yet ate butter, milk and eggs along with tons of fresh veggies from mom's garden. Along with the powdered milk mom switched to margarine and only used the whites of our fresh chicken eggs. The yolks went to the cats.

We were such a healthy family until the GIANT fat scare of the 80's hit us. :/

Swollen is EXACTLY the right word!

Carbs and veggie oils high in omega 6 fatty acids are very inflammatory. Your hands are puffy, your feet are puffy, your face is puffy... They also cause damage to your insides that lead to heart disease, arthritis, etc...

OK, so for coconut oil, I am assuming I want the unrefined vs the expeller pressed refined?

Still looking for lard...

All four of us kids grew up on powdered non fat milk. It was way cheaper than store bought fresh milk.

I was switched to soy milk cus I was "allergic" to mother's milk and cow's milk. Lactose intolerance. This was in the mid 50's.

Matt Stone really harps on this. Prior to the 1960s, people on general ate on average, 3,500 calories, regardless of their lifestyle.
There was still enough good food and good genetics that weight issues were still pretty low.

I am still reprograming myself. I have not been able to lose the weight, but its because my adrenal glands are tanked out.
Under no circumstance is dieting going to help me.
I ate lower carb from the get go of learning all about real foods. And it helped at first. Then things got worse.
Now, I eat eat more carbs, and I am forceing myself to eat way more then I ever have.
It meant being ok with regaining the tiny bit I had lost, and getting back to my original weight.
Grand total gain after 3 months of eating way more, and only real food, is 6 pounds.
The scale does nto go up any more!!!!
Now I just have to be patient and allow the adrenals to heal, and when they are ready, my metabolism will kick into high gear on its own.

I'll know its getting close, when my thermometor tells me that I am no longer organ depressed!
So far, I am about 1/3rd of the way there!

I am also slowly learning how to do simple weight training, via Scott Abel.
He is a strong advocate for only real food with core training.
The people he trains are far and above healthier then their competition.

LOL. My Imooto and I both eat like this and we are both gorgeous. Not overweight and lots of feminine curves. I'd send pics of us out to inspire kids to eat this way. You will not get fat and your female hormones can function.

I've read that the rise in PMS and other female issues is due directly to too little fat in those growing years.

I, too, was totally overwhelmed when I first started learning this stuff. Give yourself a couple of years to ramp up, but take our advice as much as possible for now for the sake of your health. For me, the sense of betrayal was the most overwhelming. I'm over it now, just disgusted by everything I read and hear in the mainstream media.

Eating traditionally works perfectly with a self-sufficient lifestyle, and is the way to better health. And is delicious. And very cheap! And is expensive gourmet if you buy it ready-made!
Take your time!! It took me two years to transition over to a better eating style because I don't cope with change well ;)

Yeah, I actually answered the Mayo question myself after posting that. The FIRST ingredient is Soy Oil... I checked my dressing... Soy oil. This stuff is EVERYWHERE! HA!

I am dying to try the bacon mayo!

I, too, can't stand highlighting/writing in books! GRRRR!

Good luck with the second offer. Might have to put a list together of the books I want and throw it on freeCycle too. Great idea!

Thank you all for the understanding, help, and patience (now and future!).

Tom
Tom, you HAVE to read everything on every label ... soy is in everything!! I don't eat soy for the reasons stated here by others and because it causes some pretty nasty reactions in my respiratory system. Soy is in 99% of all salad dressings including mayo. So if you like "salad" dressing on your greens you need to make your own.
