I've been using the tallow I rendered to lard leaner roasts. Shoving the larding needle through does take some strength but improves the meat greatly.

I have a bunch of lard to render... I've been slacking, lol! I'll use it for soap primarily. I've never canned it, just put in mason jars in the fridge . It lasts a long time like that!

I have 6 quarts in The Beast, plus 2 that went straight in the refrigerator. One is an olive jar, one is a jar that held sliced jalapeños. Just turned off The Beast.

We tried the cracklins. I put some on a plate, covered with sharp cheddar, nuked in the microwave and salted them. They were so good!

And it looks good too, making my mouth water.

Here is the chocolate - chocolate chip cookie recipe I made today using lard. You can substitute lard for butter 1:1 in any recipe you feel brave enough to try it in! Note: These do not spread as much as cookies made with butter! You will have to use your judgement when testing for doneness.
2 1/4 cups All Purpose Flour
1/4 cup Dutch Cocoa Powder (Unsweetened)
1 tsp baking soda
1 tsp salt
Whisk dry ingredients together. In a mixing bowl, add:
1 cup lard
3/4 cup light brown sugar
3/4 cup granulated sugar
Beat together, then add:
2 eggs
1 Tbsp Vanilla Extract
Beat together, then add:
2 cups chocolate chips ( I used Enjoy Life's Mega Chunks)
Bake 350* for 12-14 minutes.

Absolutely! I don't see why not! It would compliment the chocolate flavor. :drool My MIL adds Jack Daniels to sugar cookies.

I don't drink hardly at all. Wife buy me a 12 pack of October fest because she know I like it. a 12 pack lasts me the whole year.
But I love the taste of burbon in cookies.

I don't drink either, it all gives me migraines. But to cook or bake with it, no problem.
