We live in a state where the mosquito is the state bird, and there is an open harvest period for all other biting flies. They are great on the grill. In the name of self preservation, one can not indulge in excessive vitamin D manufacture without also becoming anemic.

I cheat at okra. There is a produce stand in Mineola. I order a box of okra, half bushel, he picks it that morning and calls me. We go pick it up, I spend all day, washing all of it first. I sit at the table, cutting it. I blanch it in the oven on a cookie sheet at 350 for 8 minutes, let cool and vacuum seal in bags.
Done for the year.
And yes, fry it. I freeze it unbreaded. It’s extra slimy when thawed, cornmeal sticks real good. I sprinkle season salt, garlic powder and black pepper on it, stir to season all of it. Then cornmeal gets stirred in and I fry in hot lard.

I've never eaten okra, but hubby likes it. He wanted to grow some in our garden this year and the seeds I planted are sad little things, half didn't sprout. I might have to buy some starts, or wait till next year when the garden is actually in place. What does okra taste like?

That’s why we fry okra. Then it’s not slimy. Restaurant fried okra is not good, I never eat it.

I've been told seasoned and dehydrated is decent. That does solve most of the slime! It's easy to grow here, expensive to buy. Something I don't eat. Guess I ain't so Southern.

This morning I've put a split pea soup in the crock pot. Using a ham bone from what has to be the tastiest ham I've ever eaten. Ducks have been out for a bit, and already decided to go "walk-a-'bout". So, when I came back from dropping Hubby off to p/u his car from mechanic, I gave the ducks a tooting horn escort across the road, and down the driveway to the back yard. They've been put into jail for the day.
