I'm not Hispanic - but I had smut on corn a few years ago - I plucked that stuff of, sliced it up and sautéed it and some onions/garlic in butter! YUM!

Yep, I like to freeze in the husk too! Easier, quicker & cleans well, as you say, when using. I like to do some creamed but, not a lot of it. Didn't grow any corn this year, got garden going late. Next year.......

When I make cream corn, I freeze it. When canned, it just doesn't have that garden fresh taste, more like store bought out of a can. I never froze it in the husk before. I may have to try that!

Honesty freezing husk on is the best way we found to store corn for the long haul of winter and have it retain good flavor and sweetness. There's a little extra added bonus of having husks for tamales also but we might have tamales maybe 3 times a year so that really doesn't count.

I told you my chickens would love me really long time.

I missed collecting eggs yesterday - Holy Jesus they love me. I got 49 eggs. NO more sweetcorn and frozen treats.

Truth is I have entirely too many hens now that the first brood of 14 this late winter has come in to lay.

sweet! we didn't get much corn this season. too much rain, smut took most of the crop.
