Uses for Rolled Oats

I bought a 25# bag of old fashioned rolled oats. Mostly because I'm fed up with plastic packaging when I buy in smaller quantities. 25# comes in a paper bag.

I've got the obvious covered: granola, cookies, fruit topping. I'm curious about novel and sneaky ways to incorporate oats in cooking.

I tried making oat flour in the blender. It works! I put 1 - 2 cups rolled oats in the blender and ran it on a low or medium-low speed. It's a bit more coarse then the oat flour I've purchased in the past, but I'll just call it "rustic". I'm more likely to sneak this flour into recipes than rolled oats. DH is fussy about food texture.

But! Before this experiment, I added 1/2 cup rolled oats per pound of meat into meatballs. They're for supper tonight!

I grind it and use it as a breading. Either oat or half/half oat and flour. I use whole oats making meatloaf or meatballs. I like the texture better than breadcrumbs, also in veggie burgers. I use leftover oats in muffins. I also grind oats and add to pancake batter. It does make it heavier but the Wildbunch loves my pancakes better than anyone else's. I guess it's what you grow up eating.

I am trying oat yogurt! Recipe from OATrageous Oatmeals by Kathy Hester. It's a dairy-free recipe, but I modified it to add some milk. Because I'm a neophyte! I have not made homemade yogurt in the past because "buying milk just to make into yogurt is too expensive". If this works out it would cut the cost of yogurt significantly. The cookbook says it make a firmer yogurt. I'm hopeful! My other reasons for not liking homemade yogurt are that it's too thin. And that I don't like plain yogurt. I've since figured out that my canned blueberry lemonade concentrate is a lovely addition to plain yogurt.

I always put my oatmeal, rice, flour, etc. in the freezer for a few days.

Have any of you considered oven-canning? There are definitely pros and cons to this method. I have oven-canned flour, oatmeal, and rice (long grain NOT Minute). This has come in handy with the flooding in our area due to Hurricane Harvey.

Oh, and we always used oats with the kids to feed fish off the dock. The fish love the oats and the kids love seeing them!! :)

So do you make it with oat milk? I've often made rice milk to add to cooking or baking. Just boil a cup of rice with about a quart of water and blend the crap out of it. Strain if you please. When my grandson was sick with diarrhea I gave him this to drink. I added a little vanilla and him and GD drank it like it was good. Really cheap milk substitute. I learned to do this when I was vegan.

I have been known to sneak oatmeal into a meat loaf or meat balls when I didn't have bread and/or bread crumbs.
