Thoughts on canning pumpkin? I know you should only use raw chunks. We don't use a lot throughout the year, but since canning fever is in full swing...

i have never done it but my aunt does--pressure cans it and then uses it later for pies/dessert

I canned pumpkin chunks last month. Haven't opened a jar yet. It was easy to prep and process.

I haven't done pumpkin or squash, but I canned 30 pounds of sweet potato one year. Same process, and they came out great!

6 qts of elderberries, pipping now. this freed up some containers to fill with something....this was all because of needing freezer space! But. Done. Too hot For canning fun when picked, so froze.

fridge got a little too cold yesterday so some of the celery and carrots froze, so soup it is! Going to make a couple big pots, add some ham bone for flavor and can them up today! 20 degrees outside--good day for a toasty warm kitchen.
