Those pickles are gorgeous. I've wanted to try my hand at brined pickles sometime. Here is pictures of some of my watermelon jelly. It didn't set up much. My son will still love it on pancakes or ice cream.

I used Certo for the batch pictured and did a few freezer jars using Ball Instant Pectin for freezer jelly but neither set up worth a hoot. I never do well without plain ole old fashion SureJell. Watermelon is low acid so I added lime juice and boiled it with the peels for extra acid (and flavor). It was not good watermelon at all but taste pretty good with the lime and sugar. I also dehydrated some which was downright good but the Wildbunch ate it before I could even package it up.

Whoa hold the horses - did I here you say "watermelon jelly" really??? Can I PLEASE have your recipe. I gotta try that!

I've heard watermelon jelly is good if you just really like watermelon. I don't eat much of it myself. Sounds interesting but I've never tried it.

I hear squirrels are good to eat. Haven't tried it myself, yet, but that's what I've been told.

Squirrel is good if it's prepared correctly. Some here do oven canning quite a bit, I've never tried it myself. It's the same as other canning, caution should be always considered when home canning foods. Most have had success with it from what I recall reading on here.

Yep, fried typically. They are pretty good. It's one of those things you have to cook low and slow because it'll be like leather if you don't. Low fat, good flavor.

I read on facebook that you need to use low sugar pectin to get watermelon to gel. I know Certo and Ball instant pectin didn't work. I'm going to get the low sugar Sure Jell and try that. I still have a few watermelons. If they tasted good we could probably eat them fresh but no one likes these except my one son. I never tasted such horrible watermelon. I haven't got a good tasting one this summer. The watermelon jelly taste like watermelon candy to me.

Are steam canners a replacement for boiling water bath canning? I think it would be easier than dealing with all that water.
