WHAT ARE YOU CANNING TODAY?

Well this was not very messy or exhausting. My neighbors said I could pick their tomatoes while they are on vacation for two weeks. So I did this:

after i get the jars sealed and cooled completely i put the date/batch number on them and shake them a few times to get the air bubbles out and to settle the contents down into the liquid.

tomatoes are pretty easy considering how much they can produce and i love the flavor they bring.

i used to do tomato juice but i've not done that for many years now as it does mean more work to food mill them.

I didn’t know I could shake them! I was kind of wondering about the ones floating above the water -or should I say juice- line.

My garden is running late--I had my first tomato sandwich of the season this week and I'm swimming in cucumbers.

I pulled two of my seed cucumbers today, the seeds are in a jar, but I want to do something with the full grown cucumber.

I've been doing watermelon and cantaloupe jam, but a ripe cucumber would probably work better with "savory" than sweet.

So far I have 1 cup of onion, about 5-6 cups of cubed cucumber, and green peppers as well as seeded hot peppers.

Ripe cucumber is softer than young cucumbers, and has a lemony tang to it.

Build a recipe! Go!
 
toss with lemon, garlic and olive oil and some parsley if you have it - oh, and eat it fresh not canned (even if the title of this thread says otherwise :) )...
I've been using them in meals since they started to ripen. Today is cucumber, potatoes, green peppers and onions with eggs. I'm hoping to get ideas of how to preserve some of it. I have four more seed cucumbers out there.

*edited to fix a mistake. I wrote zucchini rather than cucumber

we have been making hummus and putting a 1/2 in deep swirl on a plate then adding pretty much exactly this mix on top - yum !
