And pectin has gotten expensive!!! I bought a12pk "deal" last yr...so glad I did. Still have 10 boxes. Looking at Ball low sugar can for this yr. I'm not a fan of real sweet jams & jellies.

I buy it whenever it goes on sale. So I have several low sugar boxes still

Milk. Have 9 pints almost room temp, just filled them from the qt ones I had taken from frig a few hrs ago to warm. Need room in frig & tired of doing cheese this week. But I'm thinking cajeta next! 😉 Down to 1 jar....yeah, I need more! Milk's available.

Yes, milk is a rebel can. It's low acid. But you know what? It's been successfully done by hundreds, who are drinking it and still alive to tell us! Purity, cleanliness from milking to using is the key -- along with reaching adequate temps during the process. Carnation does it! I only pressure can it...NO WB.

I took a qt jar from pantry to frig. Let you know tomorrow 😁 these were done 5/18. There is a tiny bit of beige from white color. Minor amount of separation, shook up very easily & well. No more than you see in a jar of fresh/raw that's been setting in frig couple weeks....nothing curdly or such. Once shaken, looks just like nice fresh milk.
