WHAT ARE YOU CANNING TODAY?

I am looking for one, too! And barbecue sauce. All the ones I come across have too much sugar or are a bit too strange-tasting for me (like the NT one.....I plan on reworking it.) But the fact is, I like the sweet taste! Maybe I'll work one up with some of the raw honey I have and just not worry about it. Gotta have some sweetness now and then, and it IS just a condiment after all, used in small amounts.

I do plan on using a fermented version, though, not canned. Although I may can the BBQ sauce since it gets cooked anyways and I have limited space in my fermenting fridge by fall.

Im looking for a ketchup recipe as well. I plan to can grape juice mix next week, and depending if the Produce place in town has good peaches. We may can peaches. Just have to wait and see............

Today its boiled peanuts and pickled eggs
I got a whole bunch of peaches trying to decide what I want to do with them any ideas?

Peaches in light syrup
Peach jam
Peach jelly
Peach butter
and non can items ... Hubby just made a nice batch of peach wine!

I also often slice peaches (and other fruits) and prepare as for a fruit pie. I put the contents into a Ziplock freezer bag and fit it into a pie pan then freeze. When I "need" a pie all I have to do is pop the frozen pie cube into a cheaty pre-made store crust and bake!

Actually mine aren't ripe yet. :P I was just answering the question above.

I often do have a peach glut to deal with however, remember I have a peach tree in my front yard! I have gotten up to 60 pounds :th off that little dwarf in some years. I spent some time thinning then today and it is well filled, but I have black spots on some of the fruit already so I may lose a lot of it to mold this year. It is hard growing fruit without a ton of chemicals. :/

The peach wine and some apricot jelly, that we DID make already this year, came from my Fruit Cocktail tree which has finished already (only about 20 pounds of fruit this year due to frosts).

Peaches are difficult, apples arent hard they seem tempermental from year to year though......
