Remember when a grocery had a butcher on site to do cuts for you? And they cut primals to sell.
Now, many chains don't even keep any equipment on hand! Everything comes packaged and they just fill the counters. I have a couple places about 20 miles, where they still do most cutting and packaging. One makes sausage, grinds beef and all that.
That site is actually a butcher who has just a few grocery items. Mostly complimentary for cooking meats.
