porkchops baked with tomato sauce and parmasan cheese over whole wheat noodles with butter and parmasan cheese along with wheat bread baked yesterday.

Company Carrots are very easy.
2 lbs baby carrots or med. carrots quartered
1/4 c water
1/4 c butter or margarine
1 tsp dried oregano
1/2 tsp salt

(I also add a sprinkling of ground ginger and omit the salt)

Put carrots in an ungreased baking dish. Add water & dot with butter. Sprinkle oregano & salt. Cover and bake at 325 degrees for 1-1 1/4 hours or until tender.

Two Step Garlic Pork Chops
1 tbsp veg. oil
4 boneless chops, 3/4 inch thick
1 clove garlic, minced
1 can cream of mushroom soup
1/2 c milk

Heat the oil in a 10" skillet over med-high heat. Add the chops and garlic and cook for 10 min or until chops are well browned on both sides. Remove chops and set aside.

Stir the soup and milk into the skillet. Heat to a boil. Return the chops to the skillet and turn to low. Cover and cook for 5 minutes or until the chops are slightly pink in the center (160 degrees in center) Serve with rice or mashed potatoes.

*I used bone in chops since they are cheaper and just cook longer. I also use powdered milk, again cheaper.

**The recipe also says you can omit the garlic and use Cream of Mushroom with Roasted Garlic Soup.

HA, I didnt know that had a name, now I do. two step porkchops.
Tonite is going to be fend for yourselves nite, lol.

Tuna noodle casserole with brocolli

2 cans tuna=$1.38
1/2 bag pasta=$0.40
1 head brocolli=$0.79
can mushroom soup=$0.39

meal for 6=under $3.00

Tonight was a easy dinner - Soup made with leftovers from last nights greenbeans and the night befores beef tips with rice. Added a few carrots and potatos with some canned tomatos, a dash of this and that a fresh pan of cornbread and its dinner.

Last night it was turkey carcass soup :p with yummy homemade rolls.

Today I made a beef stew that has been simmering away in the oven for hours....smells soooooo good! Having that with left over yummy rolls. Best dinner rolls I have ever made :weee I think I have to give up on biscuits, mine are ALWAYS a flop!

How can you manage rolls but not biscuits?

We are having pizza tonight, not even homeade but take-away. I just don't feel up to cooking. We will probably have spaghetti tomorrow.

I guess I understand yeast ;) for the life of me I can not get a biscuit to turn out nice. I use cold butter/lard and minimize handling, but for some reason they are ALWAYS hockey pucks.
