Maybe left over pizza tonight, from Sunday. All homemade and with homegrown veggies. The sauce is sliced heirloom tomatoes, with fresh basil, and oregano. Toppings are: thin sliced onion, peppers, chopped garlic (lots), mozzerella cheese, sharp cheese, and more tomatoes on top. Put in the Smoky Joe for a while, then finish in convection toaster oven. Bottom of crust has to be brown and crisp. I made two 8X8 pizzas in a glass dish on Sunday, and one is for mid-week (tonight)! With a salad.

Lazy nights are pasta here. I'll make up a bolognese to put over whatever we have. I always have either hard cheese or cured egg yolks to grate on top.
