What's for dinner?

Mom made some pasta salad last week so i've come up with a few different ways to eat it as the idea of eating cold food wasn't very appealing to me.

we had a last container of chicken a la king in the freezer which i took portions of and heated it up to get it hot but also to get the texture back to more normal - it gets rather strange and spongy in the freezer, but a few minutes in the microwave and you'd never think anything had happened to it. i'd warm that up and then stir in some pasta salad to make it a more substantial meal. and Mom had some with her mushroom onion soup - i guess i've taught her some new tricks. :)
 
Chicken thighs - recipe is loosely based on Tuscan Chicken. Made a couple substitutions but it's looking pretty good. Roasted brussels sprouts (thanks FJ!) and mashed potatoes. It'll take us a couple days to eat up the potatoes because we each only have a half-cup, but sometimes the carbs are worth it!
 
ice cream in December can be a perfectly acceptable dinner, especially if it is butter pecan ice cream with extra cashews added... yes, that's what i told myself... but i also had half a peanut butter sandwich and some oranges to make sure it wasn't only dairy and nuts.

DD will pick up a ready dinner on her way home. Plus a couple packages of frozen pulled pork for some heat & eat another day. DS & I will share the 2nd pot pie. Glad that's outta frig.

Cats will be getting broth & scrappy chicken from carcass on kibble tonight. Sharing is caring.
