Zucchini and Squash???

Help..... I have a ton of zuccs and yellow squash. I have made pickled zucchini and zucchini relish. Any other preserving ideas. I have tried freezing in previous years but they always turn out mushy. Any help would be great.

I agree :D I haven't found great ways to preserve these, either. We just eat it like crazy while it is here, make a load of bread just before it ends and look forward to the next season.

But, you could make stews and soups with it in and can them. Or, you could dry them in thin slices. Good luck!

I always shred some of my zucchini in 1 cup amounts and freeze. I use it in meatloaf, hamburgers, sloppy joes, etc. Really just about anything I use ground beef for.

We split our Zucc's down the middle and scoop out the seeds, then we stuff them with sausage,goat cheese, onions, peppers and such, and then we vacuum seal them and freeze them two to a bag.
To cook them, we just thaw and stick them on the grill to cook.

I grind it up in 3 cup batches and make zucch bread in the winter to have the garden flavor lol.
Or I use it to make salsa my family hates store salsa now lol.
put in choc cake, ect.

You can also shred Zucchini and use it to make "hash browns".
MMmmmmMMM GOOD!!!

I find, if you freeze them with stewed tomatoes or tomato sauce, they come out good. They still get mushy, but it doesn't matter, because it is in the sauce anyway.
I feed extras to the chickens.

Skr8pn is the sausage cooked before you put it in the zucchini?

I definitely plan to shred some and freeze in small batches for later use in my breads.

Delicious!!!! What a great idea!!

My mom always made shreaded zucc. pancakes with a bit of ww flour, and an egg.
