Hi Mickey328...just learned to can hamburger meat...came out really GOOD...first time canner ..completely cooked and seasoned meat (16 lbs) in electric roaster.... next batch will make a rice dressing mix (cajun here) using dry roux..(no oil to go rancid).. I have enjoyed a pint of this meat...

canned meat for the first time EVER..first time to can anything...ground meat/ got aprox. one pint per pound...will definately do it again...taste wonderful...for a meal all I have to do is heat rice or potatoes + veggie or salad = meal...so many uses...fully cooked..

only thing that stopped " itching " is vinegar...vinegar...vinegar ,, even tried clorox ...didn't work....

Receipe: Cormeal - add water to consistancy of pancake....cook on hot griddle edible as is ... they call them "hoe" cakes because the worker in the field would heat and cook these on the hoe for the meal ... I used a self rising cornmeal because it is what I had at the time . ate them plain...
