i apologize for it being apart. From what I know that's the way it should be when it's not being used.​

Yup! It actually has more of an earthy molasses taste seeing how Birch sap has a lower sugar content than Maple sap it has to cook longer and slower- very very slow.

My husband said he heard it's more like 100:1 (gallons) where maple is around 40:1

That's true about Birch but Maple is 65:1 depending on the kind of maple tree that you have available. Yup, there's different Maple trees where some have a higher sugar content than others.

Maple here is around 40:1. We got closer to 35:1 this year, good trees!
