@FarmerJamie great job! I find it satisfying to see a pantry of filled jars 😁

I've been contemplating what & how to expand the use of coming figs & elderberries. Saw a fig & hot pepper jam I'd like to try. Would be a great glaze for pork or chicken. Somehow the specialty cooking loses its appeal with only yourself to eat it. 🥴

Peach jam put off -- peaches need a couple more days to ripen. The potatoes, 5 qt, are "dry" canned. No water added. Plus I scrubbed, spot trimmed, didn't peel. First time this way. They all sealed nicely and I'm sure they cooked! Will open one and decide if I like this finish better. Since I needed couple more qt to fill, I used some extra grapes. A little sugar and now juice working?

Anyone else ever canned potato this way? If I like texture better, I'll add pepper & onion next time, for a ready made stir fry.

I'm not "thrilled" with the water canned. Ok but more overcooked when you use. They're ok in some dishes, others not so much. I'm trying a jar of these dry can this weekend & will report.

However, sweets in water are still ok taste wise.

Dehydrating a whole bunch of onions. I'll chop some, grind some, once dried. Store for winter.
