Potato report.
Tried some straight out of jar. Taste was good. Not "watered down" piece of potato. Fried some, added pepper & onion. Again good taste and better texture than water canned. Didn't fall apart when cooked. Also, didn't brown up like fresh. That could have been partly due to type of potato, as some are starchier. Plus these I'd use in potato salad as they were drier. Overall, I'd do again. Obviously potato type has effect on outcome. Next time I'll do jars of different ones -- a russet, a Yukon gold, a red.
Fresh is better

but, having a few canned is nice.
Beyond that -- I put a few pounds of grapes in dehydrator (friend of a friends vines) for raisins. Yeah, they brought me waaay too many & my conscience wouldn't let me throw away. Not the concord type for jelly, so. Ate, shared & in desperation scewered each grape & they're drying. The onions I dried need to be chopped to store. Peaches went into jam. Never had time to do more cheese or something with milk....got to!! And eggs.
Not complaining for the bounty, just trying to use it!
Honestly, beyond a couple bags of flour, maybe a little more coffee, I'm stocked for about a year.
Oh -- figs will be ready for me this month. Dehydrators will be running
