WHAT ARE YOU CANNING TODAY?

I dehydrated some paste tomatoes one yr and were super good when used in cooking. Nice flavor. Heck they even tasted good just eating dried. I plan to do those again this year. Actually a nice snack, satisfying.

When I did a bunch of onions a few years ago I put the dehydrator in the garage, lol!

I put mine upstairs....still a little drifts down. Plus I cooked some with beef patties. So It's not bad. The price we pay for convenience & supply later.

Didn't get to freezer for chicken breast, will today. Prob won't thaw for canning today. Tomorrow job. Commercial pack at a 10# block. Friend works at distributor & got practically free. Have these last 2 bags to go.

. Need to buy pint jars. Have plenty of qts but not always want to can a qt of "??". Lots of filled pints

Just an update....last yr I canned fresh goat milk. To use if bottle kid & home use in cooking. This pic is jars before canning & appropriate lids.

8 months later -- it's separated & I'm thinking "crap", didn't work? So, took 2 pints out of pantry. Shook one hard for a few minutes....had this

Then I opened the shook up one, which was looking slightly tan & perfectly combined. Yep, tasted like perfect evaporated milk!! Put full lid on & set in frig. Later I'll use in mashed potatoes & as cream in hot tea. I'll update with taste test then. Now I'm thinking it's a success. Evap milk is running $1.25- 1.95, depending on brand. Since I milk my goats, this overflow costs only a lid, 25 cent, be it qt or pint jar. Plus, since they were in pressure canner but no extended time, the lid wasn't deep depression. I'd feel ok reusing on something like WB jellies or pickles.

Worked great. No re-separation so far. Taste fine, both hot tea & potatoes. I've got 8 qts & 5 pts to use but, I'd do again just to have on hand & no need to buy canned. Will use for other things & go from there.

Well store canned milk also separates so I'm not surprised. That's why it says shake well
