I went to the market and picked up about 25 lbs of peaches at 25cents per pound. I hope they can well. I ill go back for more probably tomorrow.

OOOH I love pickled eggs! I want to try them but fresh eggs are so much harder to peel than store-bought (and I won't buy those). Anyone know how to easily peel hard-boiled eggs?
 
Fresh eggs are easier to peel when you put the raw eggs in already-boiling water, boil for 15 minutes, then transfer to a bowl of ice water for 30 minutes. Either that, or I've heard you can set some aside for few weeks and then boil them like you would a store-bought egg (add eggs to cold water, then boil).

Ummm.. the instructions said I had to, and the County Extension Lady I took it to said I should. It tested perfect, so probably wasn't necessary, but when I don't know what I'm doing, I tend to follow instructions.

Picked and canned the first batch of green beans yesterday. Got 24 qt, and then planted another double row of beans right beside the first, for a later harvest.

We also planted two tomato plants, about 3 dozen onions, some radishes and a TON of lettuce in the freshly finished greenhouse!
This first season of the greenhouse is giant experiment! :fl
 
I ate some of my canned oranges which were great as were the pears but the apples were horrid and fed them all to the dogs. I will definitely be canning more oranges and pears this year.

HOW did you can your apples?

We do them two ways.......
Applesauce or apple rings/chunks.
It is hard to screw up canning apples. :plbb
 
I did them at the same time as the others but used cheap walmart apple juice rather then a medium simple syrup used on the oranges and pears. I may make some more next week in simple syrup as I really don't like apple juice. Everything was 8th sliced.

I am thinking you will be MUCH happier with a simple syrup. The only thing we use the apple juice for, is our pears....plus a stick of cinnamon.
