tonight is meatloaf in my little oven with maybe mashed potatoes....well some kind of tater for Tony and Nicole

big salad

hmm...some kind of veggie

maybe a biscuit if in the mood


kinda a real nasty day outside. not in the mood to cook or do anything. don't know if Nicole will eat cause she is still sick...so....just playing along thru the day

Hey, sylvie! If I don't have leeks, I just add more white onion or I add green onion. If I don't have fresh celery ribs, I use dried celery flakes. Sometimes I add chopped dried tomatoes. The taste is a bit different depending on ingredients, but still good. It might take about an hour for total cooking time. This is a good one to put on top of the wood stove to cook, if you have the capability.

so defrosting fish for Tony along with some rice and corn on the cob.

that will do fine for a fast change plan for dinner tonight.


me, I don't know. Not a fish lover. Probably some shrimp I will defrost and just add to a monster salad. Nicole likes all of the above so she will be easy to feed tonight.

I am in the mist of setting up for a huge yard sale. I also am watching two nephews this evening, they eat no normal food. I will order out for a cheese pizza for the kids. I made a huge pot of split pea and ham for the rest of us.

Sure, here you go:

~Yellow Split Pea Fritters~
3 oz raw yellow split peas
2 c water
1/4c each diced onion & shredded carrot
1 pkt instant chicken broth or bouillon cube
1/3 c + 2 tsp flour
1 tsp baking powder
dash pepper & salt
1/4 c milk
1 egg beaten
couple tbsp veg oil

Combine peas, water, onion, carrot and broth/bouillon and bring to boil. Reduce heat, cover and simmer, stir for 30 min. Cool.
Combine flour,baking powder, salt & pepper.
Add milk and egg to pea mixture, stir into dry ingredients.
In skillet heat tbsp oil. Spoon 4 heaping tbsp of batter making fritters.
Cook till edges bubble and browned. Turn and cook other side.
Use oil each time you add batter or turn fritter.
4 fritters =1 serving, recipe makes 4 servings.

I love this with ketchup as the condiment.

Tonight I am making a beef and barley soup. Never made it before but I have left over pot roast so it sounded like a good idea :)

Also have some super yummy rolls rising :weee
