Pancakes and sausage links tonight. It's been a long day, and it's about all DH knows how to cook :)

Cheesy Egg Bake

1 10 1/2 oz can condensed cream of whatever soup (I use celery or mushroom)
1/4 cup milk
2 tsp - 1 T grated or finely chopped onion
1 tsp minced garlic
1/4 tsp prepared mustard
4 oz shredded cheese (Swiss, Cheddar, Parmesan, Colby Jack are good)
6 eggs
6-8 1/2 inch thick slices bread slices, cut in half
Snipped herb (Parsley, Tarragon, Thyme, Oregano, Dill, or Basil)

Preheat oven to 350F.

In a microwave safe bowl, heat the soup, milk, onion and mustard. When hot, stir in cheese, stirring until melted.

Pour 1 cup of sauce into 10 x 6 x 1 baking dish. Break eggs on top of sauce. Spoon remaining sauce around eggs.

Butter both sides of bread and stand slices around baking dish edges, crust up.

Bake till eggs are set, about 20 - 30 minutes. If you like a softer yolk, cook for less time. Sprinkle with herb before serving.

Serves 6, if one egg each.

Oh Kel that looks yummy!

Chicken and Dumplings here, with a salad topped with homemade croutons.

Since some of my clan are not dumpling fans I always add noodles to my soup. Well, my pasta machine just decided to kick the bucket so I mixed the dough in my kitchen aid and then dug out a pasta roller attachment. Rolled it all out, now I am going to hand slice and cook the noodles.

I just love when life throws you a curve and yet you still manage to catch the ball :D

Kel, that sounds so yummy!!! :drool WOW homemade pasta Dace?!!! You rock!

Tonight it is baked chicken smeared with butter, pepper and salt; steamed cauliflower and purple cabbage; sauted eggplant slices.
Cornbread and butter.

Theme of tonite's dinner is "BUTTER". :drool Did I mention butter?



And for the chef, ice cold northwest IPA! :drool I'm drooling all over the place!

Uber filling and fattening all the way around! :D

What is this IPA you speak of?

I saw an awesome recipe for roasted cauliflower that I have been meaning to try...I will have to look it up. But the idea is to slice the cauliflower into giant rounds, rather than break into florets, and rub on a little olive oil, S&P roast it up then top with a little squeeze of lemon and chopped kalamata olives! Sounded incredible!

This is husband and kids' absolutely favorite and actually what I *meant* to make tonight. Instead, I got tied up going through my hives one last time and had hubby make supper instead:

Huged baked russets from the garden, fried venison burgers with sauteed onions from the garden, topped with garden tomatoes, homemade fruit ketchup, and steamed broccoli from the garden with some delicious honeycomb for dessert :p
