Thanks she is recovering, very sore but doing great. Thanks for asking!

Breakfast:
apple
raw goat's milk

Lunch:
avocado
boiled egg
water

Dinner plans:
red beet soup with cumin
side of buttered beet greens.
water

Recipe for the red beet soup???

From my Country Living Mag:

Beet and Cumin Soup (I used red beets)

1 TBSP unsalted butter
1 TBSP olive oil
1 Large Onion, coarsley chopped
1 Large garlic clove, chopped
1 teaspoon cumin seeds
1 1/2 pounds of beets, scrubbed, trimmed, peeled, and cut into chunks
3 cups of stock
sea salt and freshly ground pepper to taste
1/4 cup plain yogurt (or kefir)
chopped parsley for garnish

1. Heat butter and oil until foaming add onion, garlic, and cumin seeds. Cook til the onion is soft. Add beets, toss well, then pour in the stock. Simmer till tender.
2. Puree soup in a blender. Serve (hot or cold) with yogurt (kefir) and parsley on top.
