I'm for the kale. All time favorite veggie. We have it 2-4 times per week.
Steamed with some garlic, salt, black & red pepper, made into chips, sauted with onions, bell peppers & garlic, in soup, in stew, in casseroles, heck I even like it raw in salads. Mmmmmmmm

Roasted cauliflower sounds great!

So I know some of us on here, make lacto fermented saurkraut.
The other day, I happened across a note about making kraut chips for snacking on.
I guess you just take spoons of the raw kraut, and lay them out in a dehydrator. Spread them out to whatever size you want, and dehydrate.
I have not tried this yet, and I am craving it!

Besides all that, any kind of fresh salad with a fresh dressing from NT is allI want to eat right now.
