$40 grain mill results. This is as fine as I could get it. It spews millings all over! I'm washing it, repacking, and returning. Kitchenaid attachment is looking good right now.

I experimented with sprouted wheat berries about 12 years ago. I dried the wheat after sprouting, ground it in the Vitamix, then used like regular flour. Same result, crusty on the outside and like bread pudding in the middle.

Since then I bought some bags of various sprouted flours and had good results making bread.

I made whole wheat bread from wheat I milled and it resulted in a heavy dense loaf of bread. My husband did not like it, preferring Mrs. Bairds. His OCD had him standing in the grocery store aisle, fanning the bread slices through the wrapper, checking for holes in the bread.

Maybe you should make a loaf of bread from whole wheat and compare the loaves. You might be doing better than you think.
