14 pints...rings off & washed, jars washed, canner washed. All too hot last night. Wait a week, recheck seals & to pantry. There's shelf room and that tells me I've been using from there 😊 That's the difficult part for me -- using! Strictly mental as to being "done" & looking good, then using & needing to "re do". :lol: defeats the entire purpose.
A hundred yrs ago & off grid, using wasn't a problem. Now it's too easy. Stores everywhere. But home grown & canned keeps us healthier. No added chemicals. Worth it to me.

That & preserving our lovely gardens for yr round!!

Actually I do have a pepper/onion one I like. But had made 7 or 8 pints last spring, so not really needed. Prob caramelize them. Have some of those made, frozen in cubes. Nice for fast use. Some dehydrated. Might dehydrate & grind into powder. But onion gravy sounds good 😁 if canned with ground beef patties.

Have a PKG of calf liver, maybe just liver & onions!

Quite a few onions need to be preserved in some way
I dehydrate a lot of onions. So easy and they don't take up much room in storage.

I'll probably pop a couple trays of carrots in the dehydrator today. Love those rainbow carrots and they rehydrate well for stews or soups.
