Ginger is great with pears as well.

When I dehydrate I love to sprinkle apples with cinnamon and ginger on my pears!
 
I canned 8 quarts of peaches today. I packed those suckers in tight and still had a bit of float. Something about those peaches, just not right. I am going to save one of the little stickers to add to my pantry journal. I think I will avoid them next year.

Farmfresh, what is the texture like on dehydrated pears? Similar to an apple?

I took a break from preserving any food today. But earlier this week I canned dogfood, peach sauce and plums.
Need to start back up again tomorrow. Still have more plums to can and many more peaches ripening. We picked our first cukes too, so pickles will soon need to be made.

Yes mam!

I have trouble with floating peaches as well unless I use a medium or heavy syrup on them. You can turn jars upside down for a bit - that helps. I often assemble the fresh sliced peaches as I would for a pie, with sugar, tapioca and spice if I want it in a Ziploc freezer bag. Then I place the bag smoothly in an empty pie pan until it is frozen. At baking time I just pop a frozen filling into my pie crust and into the oven it goes with a little extra time added!
