we don't ever do puree concentrate here, but tomato chunks (not diced) and tomato juice are easy enough. i love the smell too and even after canning tomatoes all day i can still sit there and eat bits of them as i'm chunking or stirring while heating up. yes, i'm careful about using a clean spoon each time. :)
Garden fresh and home canned is so much better tasting than store bought. I find it hard to go out the door when tomatoes are cooking in the kitchen. I'm tempted to sneak a glass of warm tomato puree to drink, but I know better. I totally forget to take a gravity reading with hydrometer. I'm always curious to see how much fermentable sugars there is.

She's getting creative... I asked her what's cooking in the oven? She said the skins and seeds I had you save. I gave her a dumb look she said it will become tomato powder. I said really? You're kitchen do what you want. She said exactly 💋

What's that? "roasted green tomato verde salsa, yet to be emersion blended and canned." All I know is she's got the house smelling amazing again.

Here's yesterday's work, 18 pints of tomato puree. IDK what she did with the jar of tomato powder, I just live here.

Brussels & cabbage progress.

Still trying to keep them evenly moist and the loopers off, with water Palmolive original green & BT in a pump sprayer. We had a little rain yesterday, first time in about 4 weeks. It wasn't enough rain. So overhead sprinklers continued last night. The sprinkler head is about 3 1/2 off the ground for reference.

Single brunswick cabbage leaf width, 16 inches. Some plants leaves are wider some plants are narrower, so this is probably about average. First time ever growing Brunswick cabbage. Seed pack and website said 1 foot spacing. Ha, as you can see they really need at least 3 foot spacing.

Brussels about 24" high average, long island improved. I've grown this variety before so kind of know what to expect. They are a little more than 1/2 grown.

Would love to have recipe for green tomato salsa .please please. Looks so yummy
