It really, really was! I'm kinda proud of me because the spinach wasn't in the recipe - I just thought it would be a nice touch - and it was! Healthy can taste good!
I’m making pork chops for the family but I don’t like them so for myself it’s chickpea curry over rice. I don’t usually cook two entirely separate meals but that’s what’s happening today!
DS6 asked me to make meatballs and got ground lamb out of the freezer for them. We have been looking at Nom Nom Paleo cookbook together. It's from the library, but I might buy it. Not many cookbooks are simple and fit how I need to eat. I'm not a foodie!
Food has been limited recently for me (last two months). Not much I can do about it. System doesn't tolerate much of a range of food, or even much food at all.
However, looking forward to lupper (lunch/supper), today! Planning on iceburg lettuce salad, with endive, red onion, olive oil from Sicily. Endive is a new thing for me, so good. Either salmon or tuna fillets, to go with the salad, and baked sweet potato, with lots of butter.
