Tonight was 'I'm too lazy to cook' night for me :)

I had tomato soup and garlic cheese rolls... yummy, reheated goodness. Then three bites of a chocolate bunny.

Bringing this thread back! TIme to shake things up a bit....I need some ideas ;)

Pad Thai tonight (Thanks to BBH)

Pad Thai rice noodles
4-5 scallions chopped
4 (or more) eggs
minced garlic
cilantro
crushed peanuts
lime slices
bean sprouts
peanut sauce (recipe in a sec. keeps forever in fridge btw)
shrimp or thin sliced chicken breast


Soak rice noodles in warm water

Meanwhile stir fry eggs and garlic in oil of your choice (add garlic when eggs are almost through cooking so it doesn't burn)

Add 1/2 of your scallions and shrimp or chicken breast cook till done.

Add drained noodles and peanut sauce and heat through stirring the sauce in

Serve topped with a pile of cilantro and a pile of sprouts, squirt lime juice over the whole dish and sprinkle crushed peanuts and fresh scallions.

PEANUT SAUCE:
1 1/2 cups creamy peanut butter
1/2 cup coconut milk
3 tablespoons water
3 tablespoons fresh lime juice
3 tablespoons soy sauce
1 tablespoon fish sauce (can't even taste it)
1 tablespoon hot chili sauce (find in the Asian food section)
1 tablespoon minced fresh ginger root
3 cloves garlic crushed
minced 1/4 cup chopped fresh cilantro (don't add if you are going to store the sauce, add it right before serving, I don't think it holds up in the fridge very well)

Mix it up! Thats it. Easy peasy! I got the recipe from the internet about a year ago.

Tonight is quail baked in hoisin sauce, and broccoli on the side.
Potatoes for the man.


I was really excited about it until I read about Dace's pad thai and summer rolls.

Thats ok, you'll have the last laugh when your meal leaves you feeling proud and mine makes me feel slightly guilty for the noodle indulgence!

We were out all day so I grilled a big steak and served it with a huge salad of greens, sugar snap peas, carrots, red onion, pecans, apples and homemade blue cheese dressing. I full to bursting! We ate on the deck while admiring the chickens and ducks pecking around the yard. Perfect meal!

We'll be having turkey sandwiches.
SO had shot a turkey this week, I cooked it yesterday. It came out nice and tender. I traded my friend some eggs for good bakery bread (she got for free at her church) and FIL brought over some baked sweets from TJ's that he got for free (at the soup kitchen, where he volunteers). I also thawed out some of last summer's blackberries which will go nicely on top of some of the cake FIL brought.

mmm, guess dinner will be made with no purchased goods.
Nope, I had to buy the oil I used to coat the turkey and the salt and pepper. ;)

I am definitely adding that pad thai to my list. I love pad thai, but have never made it before. Gotta find bean sprouts. Or sprout them?!?

Tonight its homemade turkey soup and homemade wheat bread. Dh just called and said he's running late. He might miss out.

I made traditional Corned Beef and Cabbage. Working on laundry all day and house chores. It basically cooked itself.

Tamlynn, sprouts are really easy. YouTube it and you will see.

we had turkey too! one of the breasts from the toms we dressed last week - it was spectacular!!!

The pad Thai was awesome :)

To offset the noodles I added carrot & zuke ribbons and cabbage. It was yummy, but my noodles stuck a bit too much.
